Sumera's Gingerbread Protein Bites

SpiGingerbread Protein Bites

The winter season is here and I want to share this protein snack filled with warm spices to keep you on track. The best part about this recipe is that it can be made in a food processor.

Ingredients:

  • 8 soft small dates or 4 large ones (remove seeds)

  • 4 tbsp molasses

  • 1 tbsp cold water

  • 1/2 cup of shredded unsweetened coconut

  • 1 cup almond flour

  • 4 tbsp flax seeds or hemp heart seeds

  • 1 tbsp ginger

  • 1/4 tsp each cinnamon and cloves

  • 1 hand of chopped walnuts

  • finely chopped candied ginger pieces (optional)

  • Optional:1 scoop vanilla protein powder and some shredded coconut to roll in

    Note: if you want a stronger ginger flavor, you can reduce the quantity of dates and add in more molasses and ginger candy.

    Method:

    In a food processor, add the dates, molasses, water, and spices - pulse until combined. Add the almond flour, flax/hemp heart seeds, and walnuts and pulse until a mixture forms. Add candied ginger pieces and pulse 1 to 2 times. You can add 1 tbsp of water at a time until you see the mixture come together / can make a ball in your hands.

  • Makes 8 to 10 balls. You can roll these in shredded coconut to make them look like festive snowballs. These last up to 2 weeks in the fridge in a metal or glass container.
